Spiced Cherry-Lime Salsa

Think outside the pie by using this sweet summer fruit as a spicy dip or meat accompaniment.

Fresh, sweet cherries create more than just decadent desserts. Here they star in a spicy salsa filled with antioxidant-rich ingredients, from onion and garlic to lime juice and zest. Cherries are nutrient-rich too, filled with vitamin C, fiber and their own inflammation-fighting and cholesterol-lowering phytonutrients. Roasted ground cumin deepens the cool, zesty flavors; look for it in the spice aisle. Serve this unique salsa with 100 percent whole-grain corn tortilla chips, or use it as an accompaniment to grilled fish, chicken, pork or beef.

Makes about 16 servings of 1/3 cup each

4 heaping cups fresh sweet cherries, pitted and quartered (about 2 to 2 1/4 pounds fresh)
Zest and juice from 2 large limes
2 garlic cloves, finely minced
2 shallots, finely minced
3/4 cup chopped red onion
1/4 cup finely chopped fresh cilantro
1 large jalapeno pepper, seeded and finely minced
1/2 teaspoon roasted ground cumin
1/2 teaspoon salt
1/8 teaspoon ground black pepper

1. Mix all ingredients together in a large bowl. Toss lightly to blend.

2. Serve immediately, or refrigerate several hours to allow flavors to meld even more.

3. Refrigerate leftovers in a tightly covered container.
